早期儿童教育和护理中的菜单规划实践

摘要


尽管有儿童健康饮食建议的存在,但儿童早期教育和护理服务并没有按照部门饮食指南来计划菜单。本研
究旨在考察澳大利亚长期日托服务机构的以下情况:(1)菜单规划做法;(2)菜单符合部门饮食指南的普遍性;以
及(3)菜单规划做法与菜单符合部门饮食指南的程度提高有关。新南威尔士州Hunter New England的长期日间护理
服务机构参与了一项纸笔调查,评估了菜单规划做法以及社会人口学和服务特征。作者根据每天为每个孩子提供的
食物种类和自由选择的食物数量,评估两周的菜单是否符合部门饮食指南。来自72个服务机构的工作人员完成了调
查,69人提供了他们的菜单。调查结果显示,43%的服务机构的厨师完全负责计划菜单,57%的服务机构得到了书面
支持以协助计划菜单。服务机构的菜单符合六个食物组中的平均0.68个食物组和自由选择的食物。在泊松回归模型
中,较短的菜单周期(P=0.04)和接受支持菜单规划的培训机会(P<0.01)与较高的菜单合规性有显著关系。在参
与的长期日间护理服务中,菜单对部门饮食指南的遵守程度很低。实施诸如缩短菜单周期和提供培训机会的做法可
能有助于在这种环境下规划更符合饮食指南的菜单。
