食品工业中的微生物生物膜——综合综述
摘要
生物膜是微生物的结合体,与表面不可逆地连接,包含在细胞外聚合物基质中,这对食品工业构成了巨大的挑战。
为了避免形成生物膜,并从可逆附着和不可逆阶段消除它们,在这些阶段附着的微生物会提高表面附着力,需要强
力消毒剂来消除细菌附着。这篇综述论文从各个角度解决了生物膜问题,包括食品工业中形成生物膜的病原体、生
物膜的消毒剂耐受性和识别方法。由于生物膜在很大程度上是造成食品腐败和爆发的原因,因此它们也被认为是造
成食品加工设备损坏的原因。因此,需要充分了解有利于其发育或生长的所有因素,例如附着表面、食物基质成分、
环境条件、涉及的细菌细胞和表面的静电充电。总体而言,这项回顾性研究表明,由于消毒剂的抗性及其生存机制,
包括细胞间信号系统、环核苷酸第二信使和生物膜相关蛋白,生物膜对食品工业的真正威胁。
